Antioxidant action of carotenoids

Abstract

Several modes of antioxidant action of beta-carotene are discussed. In particular, the focus is on the ability of beta-carotene to function as a chain-breaking antioxidant in a lipid environment at physiological O2 partial pressures. This is the mode considered most likely to operate in mammalian cells.
