Progress in Brewing Science and Beer Production.
Bamforth CW. Annu Rev Chem Biomol Eng 2017 - Review. PMID 28301731
The brewing of beer is an ancient biotechnology, the unit processes of which have not changed in hundreds of years. Equally, scientific study within the brewing industry not only has ensured that modern beer making is highly controlled, leading to highly consistent, high-quality, healthful beverages, but also has informed many other fermentation-based industries....

Beer with reduced carbohydrates and alcohol content suitable for diabetics.
Franc A, et al. Ceska Slov Farm 2018. PMID 30871327
Traditional social habits, however, lead diabetics to drinking the beer and it has negative health effects in these patients. ...Also, for its isotonicity with blood and a suitable pH value the beer is appropriate for supplementation of liquids during physical activities. ...

An international analysis of the price and affordability of beer.
Blecher E, et al. PLoS One 2018. PMID 30557353 Free PMC article.
AIMS: To apply methods for measuring the affordability of beer in a large cross section of countries, and to investigate trends in affordability of beer over time. ...Beer has become cheaper in real terms in 49% (18/37) of HICs and 43% (20/46) of LMICs. Beer became more affordable in most HICs (RIP: 30/37 or 81%) and LMICs (RIP: 42/44 or 95%). ...

Willingness-to-pay for sustainable beer.
Carley S and Yahng L. PLoS One 2018. PMID 30289903 Free PMC article.
Based on a survey of beer consumers from across the U.S. that contained one of two willingness-to-pay exercises, we evaluate what respondent attributes are associated with a higher willingness-to-pay for sustainably brewed beer. We find that the majority of beer consumers are willing to pay more for sustainable beer. Consumers who are prepared to pay a premium tend to already pay more per unit of beer, are more aware of their purchasing behavior and the manner in which their consumption patterns may affect the environment, and pursue lifestyles based on professional advancement, helping the environment, and helping other causes....

Occurrence of glyphosate in beer from the Latvian market.
Jansons M, et al. Food Addit Contam Part A Chem Anal Control Expo Risk Assess 2018. PMID 29718772
A sensitive LC-MS/MS method for the determination of glyphosate in beer has been developed, validated, and applied to analyse 100 beer samples from 24 different producers and distributors in Latvia. ...The concentration of glyphosate in beer varied from below the LOD of 0.2 μg kg(-1) up to 150 μg kg(-1), higher than previously reported. ...

Unveiling the lager beer volatile terpenic compounds.
Martins C, et al. Food Res Int 2018. PMID 30361016
In order to increase the molecular understanding of beer volatile terpenic compounds, this work intends to perform a comprehensive characterization of these molecules on lager beer, using an advanced multidimensional chromatographic methodology. ...This study adds further insight to the lager beer terpenic volatile composition, and could be applied in large-scale studies in different contexts, namely for understanding the distinctive beer styles or for beer typing....

Deep coverage of the beer proteome.
Grochalová M, et al. J Proteomics 2017. PMID 28478308
We adopted an approach based on peptide immobilized pH gradient-isoelectric focusing (IPG-IEF) separation, coupled with LC-MS/MS, in order to maximize coverage of the beer proteome. ...SIGNIFICANCE: The study significantly extends knowledge about the beer proteome and demonstrates its complexity. Detailed knowledge of the protein content, especially gluten proteins, will enhance the evaluation of potential health risks related to beer consumption (coeliac disease) and will contribute to improving beer quality....

Influence of malt source on beer chemistry, flavor, and flavor stability.
Bettenhausen HM, et al. Food Res Int 2018. PMID 30195545
Here, a study was performed to determine (i) if there are metabolite differences among six commercial malt sources, (ii) if differences in malt chemistry are reflected in the chemistry of the beer, and (iii) if the differences in the beer chemistry impact sensory attributes of beer, through flavor and flavor stability. ...The metabolite and sensory data were integrated and revealed associations between flavor profiles in beer and the annotated malt and beer. ...
